    Vegetable - Broccoli + Hot Peppers

    List of Ingredients

    1 teaspoon salt
    1 head broccoli, trimmed and separated into spears
    1 tablespoon balsamic vinegar
    2 - 3 tablespoons Olive oil
    2 fresh jalapeno peppers, thinly sliced
    ...(with or without seeds, depending on desired hotness)
    1/4 cup toasted pine nuts, optional
    sprigs freshly chopped coriander or parsley, optional

    Recipe

    Bring a pot of water to the boil.
    Add salt and broccoli spears.
    Bring to boil again.
    Cook for 3 to 5 minutes or to desired tenderness.
    Drain and place in bowl of ice cold water for 30 seconds. Drain again.
    Place spears on a serving plate.
    Drizzle evenly with vinegar.
    Use a small frying pan to heat oil over medium heat.
    Add peppers and saute for 2 - 3 minutes until softened.
    Pour pan contents evenly over broccoli.
    Garnish with pine nuts and coriander.
    Makes 4 servings.
