    Vegetable - Carrot Pilaf

    List of Ingredients

    1 c. shredded carrots
    1/2 c. chopped onion
    1 tbsp. butter
    1 c. uncooked long grain rice
    1 14 1/2oz. can low sodium (salt) chicken broth
    1 tsp. lemon pepper seasoning

    Recipe

    Saute carrots and onion in a saucepan until tender.
    Add rice and toss to coat.
    Stir in broth and lemon pepper seasoning.
    Bring to a boil, reduce heat, cover and simmer 20 minutes or until rice is tender.
    Makes 6 servings.
