    Vegetable - Carrots Baked with Sherry

    List of Ingredients

    3 cups grated carrots (3 large)
    2 tablespoons melted I Can't Believe It's Not Butter Light
    2 tablespoons dry sherry
    1 tablespoon fresh lemon juice
    1 tablespoon chopped chives

    Recipe

    Preheat oven to 350 degrees F. Need a 1 quart baking dish.
    Combine the carrots, butter light, sherry and lemon juice
    together and stir well.
    Place in the baking dish and sprinkle with the chives.
    Cover and bake for 30 minutes.
    Makes 6 servings.
