    Vegetable - Cauliflower Au Gratin

    List of Ingredients

    2 c. cauliflower florets
    1 tsp. salt
    1 tsp. butter or I can't believe it's not butter
    1 tsp. flour
    1 c. cold milk
    1/4 c. diced American cheese
    vegetable cooking spray
    1/4 tsp. salt
    1/4 tsp. ground black pepper

    Recipe

    Preheat oven to 350. Coat a 2 quart casserole with non stick cooking spray.
    Place florets in large kettle. Fill with enough water to cover.
    Add salt and bring to a boil. Cook to crisp tender. Drain and rinse with cold water.
    Place into casserole dish. Sprinkle with salt and pepper.
    Melt butter in a saucepan. Add flour and stir until well blended.
    Add milk and cheese. Continue to cook over a low heat, stirring constantly, until slightly thickened.
    Pour over cauliflower florets.
    Bake for 20 - 25 minutes.
    Makes 4 servings.

    Diabetic exchange per serving:
    1 vegetable, 1/2 meat, 119 calories
