    Sidedish - Cheese + Rice Casserole

    List of Ingredients

    2 1/2 c. cooked brown rice
    3 chopped green onions, (scallions)
    1 c. low fat cottage cheese or Hoop Cheese
    1 tsp. dried dill
    1/4 c. fresh grated Parmesan cheese
    1/2 c. low fat milk

    Recipe

    Preheat oven to 350. Lightly oil a 2 1/2 quart casserole.
    Combine all the ingredients in a mixing bowl.
    Pour into casserole and bake for 15 - 20 minutes.
    Makes 4 servings.
