    Vegetable - Cheesy Twice Baked Potatoes

    List of Ingredients

    2, 8 ounce each baking potatoes
    1/4 cup fat-free sour cream
    1/4 cup fat-free milk
    1/2 cup + 1/4 cup shredded reduced fat sharp or mild,
    ...Cheddar cheese, divided
    salt and pepper to taste
    paprika

    Recipe

    Pierce potatoes with a fork and bake at 400 degrees for
    about 1 hour or until tender.
    Cut each potato into half lengthwise.
    Let cool until able to hold.
    Scoop the insides from the potatoes, leaving the outer
    shells intact.
    Mash or beat the warm potatoes until semi smooth.
    Add the sour cream, milk, and 1/2 cup of the cheese.
    Season with salt and pepper.
    Spoon into the potato shells and sprinkle with the 1/4 cup
    cheese and paprika.
    Bake at 400 degrees F. for 20 - 25 minutes, or until
    heated through and cheese is melted.
    Makes 4 servings.
