Vegetable - Cherry Carrots

List of Ingredients
1 lb. fresh peeled and sliced carrots
1 c. frozen, unsweetened tart cherries
3 tbsp. maple syrup
2 tbsp. I can't believe its not butter light
1/2 tsp. ground nutmeg
1/4 tsp. ground ginger
Recipe
Place carrots in a medium saucepan with enough water to cover.
Cover, and cook for 8 - 10 minutes or until tender. Drain well.
Put drained carrots back in the saucepan.
Add the cherries, maple syrup, butter light, nutmeg and ginger.
Toss to coat carrots with all ingredients.
(It is unnecessary to thaw cherries before combining.)
Cook over a medium heat until the mixture is hot and bubbly, stirring occasionally.
Makes six 1/2 c. Servings.
