Meat - Chicken Picadillo

List of Ingredients
2 teaspoons Olive oil
1 small finely chopped onion
1 finely chopped green bell pepper
2 cloves mashed garlic
1 pound boneless, skinless chicken breast,
...cut into thin strips
1/4 cup tomato sauce
4 tablespoons apple juice or white wine
1/4 teaspoon grouond cumin
2 bay leaves
raisins to taste
capers to taste
green olives to taste
Recipe
Saute the onion, green pepper and garlic in the olive oil over a medium heat for 5 minutes, until soft.
Add the chicken and stir fry for about 5 minutes.
Add tomato sauce, apple juice, cumin, bay leaves, raisins, capers and green olives.
Cover. Reduce heat, and simmer for 10 minutes, or until the chicken is well cooked.
Remove bay leaves.
Serve with white rice and fried ripe plantains, (a tropical banana fruit.)
