    PiePastry - Chocolate Cherry Tarts

    List of Ingredients

    2 8oz. pkgs. light cream cheese, room temperature
    2/3 c. Splenda or Sugar Twin sugar substitute
    2 eggs, room temperature
    1 tsp. vanilla extract
    24 reduced fat chocolate wafers, (Keebler 30%)
    1 21oz. can light cherry pie filling

    Recipe

    Preheat oven to 350. Use foil+paper liners and insert into muffin tins. (it is important not to use plain paper liners.)
    Beat cream cheese and sugar substitute until creamy.
    Add the eggs and vanilla and beat well, until smooth.
    Place a chocolate wafer in the bottom of each muffin cup.
    Top with a dollop of the cheese mixture.
    Bake for 18 - 20 minutes.
    Remove tarts from the tins and let cool.
    Top with cherry pie filling.
    Refrigerate overnight before serving.
    Makes 24 tarts.
