    Meat - Corned Beef Dinner

    List of Ingredients

    4 pound corned beef roast
    water
    6 chopped onions
    6 sliced carrots
    6 chopped parsnips
    3 chopped potatoes, (12 ounces total)
    6 cups chopped cabbage

    Recipe

    Place the meat in a Dutch oven type pan with just enough water to cover the meat.
    Bring to a boil; then drain.
    Add water to cover again and again bring to a boil.
    Reduce the heat to low.
    Cover and cook until the meat is nearly tender (about 3 hours).
    Skim off as much fat as possible from the cooking water.
    (If you remove the meat from the broth and then refrigerate the broth; in a short time the fat will harden and will remove easily.)
    Add the vegetables and meat to the broth and cook until the vegetables are tender.
    Remove the meat from the broth.
    Trim the meat of any fat and stir back into the vegetables and broth.
    Makes 16 three ounce servings.

    Diabetic exchanges per serving:
    1 starch/bread, 2 vegetable, 3 lean meat
    300 calories
