    Meat - Country French Chicken

    List of Ingredients

    2 pounds boneless skinless meaty chicken,
    ...(breasts, thighs, drumsticks)
    nonstick spray coating
    1 cup sliced fresh mushrooms
    1 cup sliced celery
    1 cup dry white wine
    1 cup coarsely chopped carrot
    1 medium onion, cut into small wedges
    1 clove minced garlic
    1 bay leaf
    3/4 teaspoon dried parsley
    1/4 teaspoon dried thyme

    Recipe

    Rinse the chicken and pat dry.
    Coat a large cold skillet with non stick cooking spray. Preheat the skillet over a medium heat.
    Brown the chicken on all sides, then drain the fat from the skillet.
    Season the chicken lightly with salt and pepper.
    Add the mushrooms, celery, white wine, carrot, onion, garlic, bay leaf, parsley, and thyme to the skillet.
    Bring to boiling; reduce heat.
    Cover and simmer for 35 - 40 minutes or until the chicken is tender and no longer pink.
    Discard bay leaf. Transfer the chicken and vegetables to a platter and keep warm.
    Bring the liquid in the skillet to boiling.
    Cook for about 3 minutes or until it is reduced to 1/2 cup. Pour the sauce over the chicken and vegetables.
    Makes 6 servings.
