    Vegetable - Cranberry Sweet Potatoes

    List of Ingredients

    6 whole sweet potatoes, washed
    1/2 c. frozen orange juice concentrate
    2 c. fresh or frozen cranberries
    sugar substitute, (sweetener), to taste, optional

    Recipe

    Bake Cook the sweet potatoes until soft. (can bake at 400 for about 40 minutes, if desired.)
    Mix the orange juice concentrate and cranberries in a saucepan and bring to a boil.
    Lower the heat and simmer until the cranberries pop and the sauce thickens.
    Add the sugar substitute, if desired.
    Cut the tops of the sweet potatoes open and press open from the bottom.
    Then top each potato with the cranberry orange sauce.
    Makes 6 servings.
