    Vegetable - Creamy Succotash

    List of Ingredients

    1 small chopped onion
    1 tbsp. I Can't Believe It's Not Butter Light
    2 c. frozen baby lima beans
    2 c. fresh, canned or frozen whole kernel corn
    1/2 c. reduced sodium vegetable broth
    1/2 c. fat free half + half or fat free milk
    salt and pepper to taste

    Recipe

    Saute the onion in the butter light in a medium saucepan until tender, approximately 5 - 8 minutes.
    Stir in the lima beans, corn, broth, and half + half and heat to boiling.
    Reduce heat and simmer, covered, until the vegetables are tender, approximately 5 minutes.
    Season to taste with salt and pepper.
    Makes 4 servings.
