    Meat - Down Home Barbecued Beef

    List of Ingredients

    1 slice bacon, cut into 1" pieces
    1/2 c. chopped onion
    1/2 c. ketchup
    1/2 c. apple juice
    1 tbsp. white vinegar
    1 tsp. prepared yellow mustard
    1 tsp. Worcestershire sauce
    1/8 tsp. salt
    1/8 tsp. ground black pepper
    8 packets Splenda/Sugar Twin/Sweet n Low/Equal sugar substitute
    12oz. thinly sliced, fully cooked roast beef
    4 kaiser type rolls, optional

    Recipe

    Cook the bacon in a medium saucepan over medium/high heat for 3 - 4 minutes or until almost cooked.
    Add the onion and cook 3 - 5 minutes, stirring constantly, or until the bacon is crisp and the onion is tender.
    Combine the ketchup, apple juice, vinegar, mustard, Worcestershire sauce, salt and pepper and then add to the bacon mixture. Reduce the heat. Cover and simmer until the flavors are blended, approximately 15 to 20 minutes.
    Stir in the sugar substitute and sliced beef.
    Serve warm on rolls, if desired.
    Makes 4 servings.
