    Sidedish - Festive Orange Rice

    List of Ingredients

    2 tbsp. minced raw onion
    2/3 c. finely chopped celery
    3 tbsp. melted I Can't Believe It's Not Butter Light
    1 c. white raw rice
    2 tbsp. grated orange rind
    1 c. orange juice
    1 1/2 c. water
    1 1/4 tsp. salt
    1/8 tsp. dried thyme

    Recipe

    Use a medium saucepan to saute the onion and celery in the butter light.
    Add remaining ingredients and bring to a boil.
    Lower the heat. Cover and simmer for about 20 minutes or until the rice is tender.
    Remove from the heat and toss lightly with a fork.
    Replace the cover and let the rice set until all the moisture is absorbed, about 5 - 10 minutes.
    Makes 6 servings.
