    Meat - Fruit Stuffed Pork Tenderloin

    List of Ingredients

    1/3 c. finely chopped onion
    1 + 1 minced garlic cloves, separated
    1 tbsp. I Can't Believe It's Not Butter Light
    1 small finely chopped tart apple
    1/4 c. chopped pitted prunes
    1/4 c. unsweetened apple juice or dry white wine
    2 tbsp. sugar substitute
    1/2 tsp. + 1/4 tsp. dried rosemary
    1/2 tsp. + 1/4 tsp. dried thyme
    1/4 c. cornbread stuffing crumbs
    salt and pepper
    1 16oz. whole pork tenderloin

    Recipe

    Use a medium frying pan to saute the onion and 1 garlic clove in the butter
    light until tender, about 5 minutes.
    Add the apple and prunes and cook for 2 - 3 minutes.
    Add the apple juice, sugar substitute, the 1/2 tsp. of rosemary and thyme.
    Cover and cook over a medium heat until the juice is evaporated, about 5
    minutes.
    Stir in the stuffing crumbs and season to taste with the salt and pepper.
    Preheat oven to 350.
    Cut a lengthwise slit, about 2" deep, in the tenderloin.
    Mix the other garlic clove, 1/4 tsp. rosemary and 1/4 tsp. thyme together.
    Rub all over the outside of the tenderloin.
    Spoon the fruit stuffing inside the slit in the tenderloin.
    Place in baking pan and bake, uncovered, for 45 minutes, until the meat is
    no longer pink in the center. (A meat thermometer will register 160oF).
    Let stand for 5 - 10 minutes before slicing.
    Makes 4 servings.
