    PiePastry - Fruit Tart

    List of Ingredients

    1/3 c. whole wheat flour
    1/3 c. flour
    1 tbsp. + 2 tsp. sugar or sugar substitute, separated
    3 tbsp. I Can't Believe It's Not Butter Light
    2 tbsp. ice water
    1 tsp. cornstarch
    1/2 c. orange juice
    1 peeled and sliced Kiwi fruit
    3/4 c. thinly sliced banana
    1 c. thinly sliced fresh strawberries

    Recipe

    Preheat the oven to 400. Need an ungreased baking sheet.
    Combine flours and the 1 tbsp. sugar substitute.
    Cut in the butter light until the mixture resembles coarse crumbs.
    Sprinkle with ice water and toss until crumbly.
    Roll the dough into a ball.
    Press the dough into a circle on waxed paper.
    Cover with another sheet of waxed paper and roll into a 10" circle.
    Remove the top sheet of waxed paper and place onto the baking sheet.
    Crimp the pastry edge as you desire, with your fingers or prick with a fork.
    Bake the crust for 12 - 15 minutes or until lightly browned. Let cool.
    Combine the 2 tsp. sugar and cornstarch together in a saucepan.
    Stir in the orange juice.
    Bring to a boil, reduce heat and simmer until thickened.
    Remove from heat and let cool.
    Slide the crust onto a serving plate.
    Arrange the kiwi fruit in the center.
    Place the bananas around the kiwi and the strawberries around the bananas.
    Drizzle the glaze over the fruit.
    Serve immediately or chill 1 hour.
    Makes 6 servings.
