    Meat - Garlic Stuffed Sirloin Steak

    List of Ingredients

    1 tbsp. olive oil
    1/4 c. finely chopped garlic cloves
    1/2 c. minced raw scallions
    salt and pepper
    2 1/2 lbs. boneless beef steak, cut 2" thick
    toothpicks

    Recipe

    Heat the oil in a medium skillet over a medium heat.
    Add the garlic and saute for 5 minutes.
    Add the scallions and saute for 5 more minutes.
    Add the pepper and salt and remove from the heat.
    Let cool.
    Prepare an outdoor grill with an oiled rack set 6" from the heat source. (On a gas grill, set the heat to medium.)
    Trim any excess fat from the steak.
    Make a horizontal slice through the center of the steak, parallel to the surface of the meat, about 1" from each side.
    Cut into, but not through, to the opposite side.
    Spoon the garlic/scallion stuffing into the pocket, spreading evenly.
    Secure the opening with toothpicks.
    Grill, turning once, according to the following guidelines:
    15 - 20 minutes for rare
    25 - 30 minutes for medium
    35 - 40 minutes for well done
    Remove the toothpicks and slice to serve.
    Makes 6 servings.
