    Meat - Glazed Turkey Scaloppini

    List of Ingredients

    3 tablespoons flour
    1/2 teaspoon seasoned salt
    1/4 teaspoon ground white pepper
    1 pound thinly sliced boneless turkey breast
    1/4 cup dry white wine
    1/2 cup canned reduced sodium chicken broth
    1/4 cup sweet Marsala wine
    1 minced garlic clove
    2 teaspoons brown sugar or substitute
    1 teaspoon cornstarch
    2 tablespoons cold water
    1/2 teaspoon grated lemon zest

    Recipe

    Mix the flour with the seasoned salt and pepper in a soup
    dish or a plastic bag.
    Dip the meat slices and shake off any excess.
    Coat a large frying pan with cooking spray.
    Use a medium/high heat to heat pan.
    Cook the meat, in a single layer for about 2 minutes on each
    side, or until light tan in color.
    Remove the meat to a platter and keep warm.
    Using the same pan, add the white wine, chicken broth, marsala,
    garlic, and brown sugar. Stir, scraping the bits from the bottom of
    the pan, (deglazing.) Bring to a boil and reduce to about 1/2 cup.
    Use a small bowl to mix the cornstarch with the cold water,
    making
    sure there are no lumps and add to the pan.
    Bring to a boil.
    Stir in the lemon zestand reduce to a simmer.
    Place the meat back in the pan.
    Coat with the sauce and heat for about 5 minutes, until thoroughly
    heated. Makes 4 servings.
