    Sidedish - Golden Pilaf with Cinnamon

    List of Ingredients

    3/4 c. chopped onion
    2 tsp. Olive oil
    1 c. uncooked long grain white rice
    2 c. reduced sodium chicken broth
    1/2 c. dried currants
    1 tsp. ground turmeric
    1/2 tsp. ground cinnamon
    1/2 tsp. salt, optional
    1 tbsp. dried parsley

    Recipe

    Heat oil in a medium saucepan over a medium/low heat.
    Saute the onion about 5 minutes, until tender.
    Add the rice and saute for 1 minute.
    Stir in the broth, currants, turmeric, cinnamon, and salt.
    Bring to a boil.
    Then reduce the heat.
    Cover and simmer about 20 minutes, until most of the liquid is absorbed.
    Remove from the heat and let set, covered, for 5 minutes.
    Stir in the parsley.
    Makes 6 servings.
