    SoupStew - Lamb + Green Bean Stew

    Recipe Introduction

    This meal-in-a-dish is more the consistency of a soup rather than a stew. A delicate Mediterranean stew, flavored with cinnamon and a hint of allspice

    List of Ingredients

    1 1/2 lbs. fresh whole green beans, washed, drained and snapped into 1" pieces
    1 1/2 lbs. boneless lamb stew meat, cut in 1" cubes
    2 tbsp. butter
    2 medium/large onions, cut into thin wedges
    1 1/2 tsp. seasoning salt
    1/2 - 1 tsp. cinnamon
    1/4 tsp. allspice
    2 c. water (a little more if needed)

    Recipe

    Brown the lamb meat pieces in the butter.
    Add onion and saute until soft.
    Pour into a 5 quart soup pot.
    Stir in the seasoning salt, cinnamon and allspice and stir to coat.
    Add the green beans stir well.
    Cover, reduce heat and simmer for about 15 minutes.
    Stir the water in and cook over a low heat for approximately one hour, or until meat is tender.
    Serve over rice or noodles, with a nice crusty bread and a salad.
    Makes 6 servings.
