    Meat - Lemon Chicken + Rice Dinner

    List of Ingredients

    1 lb. boneless skinless chicken breasts, cut into strips
    1 medium chopped onion
    1 large thinly sliced carrot
    2 cloves minced garlic
    2 tbsp. I can't believe its not butter light
    1 tbsp. cornstarch
    1 14 1/2oz. can low sodium chicken broth
    2 tbsp. lemon juice
    1 1/2 c. uncooked instant rice
    1 c. frozen peas, thawed

    Recipe

    Melt butter light in a frying pan and saute chicken, onion, carrot and garlic for 5 - 7 minutes, or until chicken is no longer pink.
    In a bowl, combine cornstarch, broth and lemon juice until smooth.
    Add to skillet and bring to a boil. Cook and stir for 2 minutes or until thickened.
    Stir in rice and peas.
    Remove from heat. Cover and let stand 5 minutes.
    Makes 6 servings.
