    Sidedish - Macaroni + 2 Cheese Casserole

    List of Ingredients

    1 c. uncooked pasta, (4oz.), elbow, small shell, or ziti
    2 tbsp. I Can't Believe It's Not Butter Light
    2 tbsp. finely chopped shallots or onion
    1 tbsp. flour
    1 c. fat free milk
    3/4 c. shredded low fat sharp Cheddar cheese, (3oz.)
    1 slice whole wheat bread, crumbled into soft crumbs
    1/4 tsp. paprika, preferably hot Hungarian
    2 tbsp. grated Parmesan or Asiago cheese

    Recipe

    Coat a casserole dish with non stick cooking spray.
    Cook the macaroni al dente, to the package directions, omitting the salt and drain well.
    Use a medium saucepan to melt 1 tbsp. of the butter light over a medium heat.
    Saute the shallots for about 3 minutes, or until tender.
    Add the flour. Stir and cook for 1 minute.
    Stir in the milk and cook until the sauce thickens, about 4 minutes, stirring often.
    Add the Cheddar cheese, and stir until melted.
    Preheat the broiler.
    Stir in the cooked macaroni and mix well and pour into the casserole dish.
    Melt the other tbsp. butter light and combine it with the bread crumbs and Parmesan cheese.
    Sprinkle over top of the macaroni and broil 4 - 5" from the heat until the top is lightly browned, about 2 minutes.
    Makes 4 servings.
