    Meat - Curry + Lime Chicken Breasts

    Olive oil cooking spray, or 2 teaspoons pourable
    2 thinly sliced shallots, or
    ...1 small onion + 1 garlic clove, thinly sliced
    1/4 cup diced green bell pepper
    1 tablespoon curry powder
    1 pound boneless skinless chicken breasts,
    ...diagnolly/thinly sliced
    the juice of 2 limes
    1/4 cup plain low fat yogurt
    fresh parsley sprigs for garnish, optional
    1 tablespoon slivered almonds for garnish, optional

    Coat a large non stick frying pan with the cooking spray.
    Saute the shallots and chopped pepper until soft or tender.
    Stir in the curry powder.
    Add the chicken and saute until no longer pink.
    Add the lime juice and stir.
    Add the yogourt and stir.
    Garnish with parsley and almonds, if desired.
    Makes 4 servings.
