    SoupStew - Meatball Soup

    List of Ingredients

    1 1/2 pounds ground turkey
    2 egg whites
    1/4 cup seasoned dry bread crumbs
    4 minced garlic cloves, divided in halves
    2 tablespoons + 1 tablespoon Italian seasoning, separated
    Olive oil cooking spray
    4, 15 ounce cans reduced sodium chicken broth
    3 cups water
    2 cups cut green beans, may cut into 1/2 inch pieces
    4 medium sliced carrots
    2 coarsely chopped medium onions
    1/2 pound uncooked thin spaghetti pasta, broken into 2 - 3 inch pieces
    2 coarsely chopped medium plum tomatoes
    salt and pepper to taste

    Recipe

    Using a medium bowl, combine the ground turkey, egg whites, bread crumbs, 1/2 of garlic, and 2 tablespoons of Italian seasoning until well blended.
    Roll into 32 meatballs.
    Coat a large frying pan with cooking spray.
    Cook the meatballs over a medium heat until browned on all sides. This may need to be done in batches.
    Place meatballs in a stock pot.
    Add the chicken broth, water, green beans, carrots, onions,
    the other 1/2 of the garlic, and the 1 tablespoon Italian
    seasoning to the pot.
    Bring to a boil.
    Lower heat and cover.
    Simmer until the vegetables are to the tenderness you desire.
    Then bring to a boil again. Uncover.
    Add the pasta and tomatoes.Do not cover.
    Reduce heat simmer until the pasta is al dente, for approximately 10 minutes.
    Season to taste with salt and pepper.
    Makes 8 servings.
