    Vegetable - Mock Crab Cakes

    List of Ingredients

    2 c. grated zucchini
    2 lightly beaten large eggs
    1 c. fine dry breadcrumbs
    3 chopped green onions, (scallions can be used)
    2 tsp. Old Bay Seafood seasoning mix
    1 tsp. mayonnaise
    vegetable oil
    tartar sauce, optional

    Recipe

    Drain grated zucchini well, pressing between layers of paper towels.
    Combine zucchini, eggs, breadcrumbs, onions, seafood seasoning and mayonnaise in a large bowl.
    Divide mixture into 8 portions, shaping each into a patty. (Mixture will be soft.)
    Pour the oil to a 1/2" depth into a large heavy skillet and heat.
    Fry patties over a medium/high heat for 2 minutes on each side.
    Drain on paper towels.
    Serve with tartar sauce, if desired.
    Makes 8 servings.
