Sidedish - Orange Rice
2 tbsp. minced raw onion
2/3 c. chopped celery
3 tbsp. melted I can't believe its not butter light
1 c. uncooked long grain rice
2 tbsp. granted orange rind
1 c. orange juice
1 1/2 c. water
1 1/4 tsp. salt
1/8 tsp. thyme seasoning
Saute onion and celery in butter light until tender.
Add remaining ingredients.
Bring to a boil.
Lower heat, cover and simmer for about 20 minutes or until rice is tender.
Remove from heat and toss lightly with a fork.
Replace cover and let rice stand about 5 - 10 minutes, until dry.
Makes 6 servings.
