1 tablespoon I Can't Believe It's Not Butter Light
1/4 cup finely minced onion
1 finely minced garlic clove
5 cups low sodium beef or chicken broth
1 bay leaf
1/2 teaspoon salt substitute
1/2 teaspoon dried oregano
1/4 teaspoon curry powder
1/8 teaspoon ground black pepper
1/2, 10 ounce box frozen chopped spinach,
...thawed and squeezed dry
1/2 cup very small sized pasta, uncooked
Recipe
Melt the butter light in a saucepan. Saute the onion and garlic for
about 3 minutes. Add the broth, bay leaf, salt substitute, oregano,
curry, and pepper. Cover and let simmer for at least 8 minutes. Add
the spinach and pasta and simmer for time specified on package with
the most time listed. Remove the bay leaf and serve.
Makes 4, 1 1/2 cup servings.
