    Pasta - Penne Primavera Salad

    List of Ingredients

    1 lb. penne or medium pasta shells, cooked al dente to pkg directions,
    cooled
    1/2 c. thawed frozen peas, cooked
    1 large sliced yellow or red bell pepper
    1/2 c. sliced green onions
    1/2 c. blanched sugar snap peas
    1/2 c. thinly sliced carrots
    1 c. skim milk
    1/2 c. fat free mayonnaise
    1/2 c. red wine vinegar
    1 tbsp. dried minced parsley
    2 tsp. crushed, drained green peppercorns, optional
    1/4 c. sugar substitute
    salt and pepper

    Recipe

    Combine the pasta, peas, bell pepper, green onions, snap peas and carrots
    together in a salad bowl. Set aside.
    In another, medium bowl, blend the milk and mayonnaise together until
    smooth.
    Into the milk mixture, stir in the vinegar, parsley, peppercorns and sugar
    substitite.
    Pour this mixture over the salad and toss to coat.
    Season to taste with salt and pepper.
    Makes 6 servings.
