Vegetable - Pepper, Potatoes and Barley

List of Ingredients
3 large sliced chilies
1 med. chopped onion
1 tbsp. Olive or vegetable oil
3/4 lb. russet potatoes, unpeeled, cooked, cubed
2 c. cooked barley
2 tbsp. finely chopped cilantro leaves
1/2 tsp. dried cumin
salt and cayenne pepper to taste
Recipe
Saute chilies and onion in the oil in a large frying pan
until crisp tender, about 5 minutes.
Add barley and cook over a medium heat until heated
through, 3 - 4 minutes.
Stir in cilantro and cumin.
Season to taste with salt and cayenne pepper.
