    Sidedish - Rice Pilaf

    List of Ingredients

    3/4 c. uncooked wild rice
    3 c. vegetable broth
    3/4 c. uncooked long grain brown rice
    3/4 tsp. salt
    1 tsp. vegetable or canola oil
    3/4 c. sliced fresh mushrooms, optional
    1/2 c. chopped red pepper
    1/2 c. chopped yellow or green pepper
    1/4 c. grated carrot
    2 minced cloves garlic
    1/4 tsp. curry powder
    1/4 tsp. ground black pepper
    1/8 tsp. ground cumin

    Recipe

    Saute mushrooms, peppers, carrot and garlic in oil until crisp tender. Set aside.
    Rinse rice in 3 changes of cold water; drain and set aside.
    In a saucepan, bring the vegetable broth to a boil.
    Stir in rices, salt, sauteed vegetables, curry, ground pepper, and cumin.
    Cover, reduce heat, and simmer 30 - 35 minutes or until liquid is absorbed.
    Fluff and serve warm.
    Makes 12 servings.
