    Vegetable - Stuffed Peppers #1

    List of Ingredients

    4 medium green bell peppers
    2 c. lefotver cooked rice
    1 c. shredded low fat Cheddar cheese, (4oz.)
    3/4 tsp. dried parsley
    1/2 tsp. salt
    1/8 tsp. ground black pepper

    Recipe

    Preheat the oven to 300.
    Slice off the tops of the peppers.
    Wash the peppers and remove the insides.
    Steam peppers in an upright position. Drain.
    Use a large bowl to mix the rice, cheese parsley, salt, and ground pepper.
    Stuff peppers with the mixture.
    Place peppers in a loaf pan.
    Bake for approximately 15 minutes, until the filling is hot and the cheese melts.
    Makes 4 servings.
