    Meat - Rosemary Chicken + Potatoes

    List of Ingredients

    1, 3 pound skinless chicken, cut in 8 pieces
    1 tablespoon extra virgin Olive oil
    1 teaspoon dried rosemary
    3 large minced garlic cloves
    1/4 teaspoon ground black pepper
    1 large, 12 ounce , baking potato, peeled, cut into 8 wedges
    1 tablespoon dried parsley
    1/2 teaspoon grated lemon zest

    Recipe

    Preheat the oven to 375 degrees F.
    Place the chicken in a casserole dish.
    Brush with the oil and sprinkle with the rosemary, 2/3 of
    the garlic, and the pepper.
    Place the potato wedges around the chicken in the casserole dish.
    Cover with foil and bake for 30 minutes.
    Uncover and baste the chicken with the pan juices.
    Continue to bake 20 minutes longer, or until the chicken and potatoes are tender.
    Combine the parsley, lemon zest, and remaining garlic.
    Sprinkle over the chicken before serving.
    Makes 4 servings of 1/4 chicken + 2 potato wedges.
