SoupStew - Spinach + Pasta Soup

List of Ingredients
1 tbsp. vegetable oil
1/4 c. thinly sliced onion
1 clove freshly minced garlic
5 c. low sodium chicken broth
1 bay leaf
1/2 tsp. salt substitute, ( Nu Salt)
1/2 tsp. dried oregano
1/8 tsp. pepper
1 10oz. pkg. frozen chopped spinach, thawed and squeezed dried
1/2 c. uncooked tiny pasta shapes
Recipe
Put oil in a saucepan and heat.
Add the onion and garlic and saute for about 4 minutes.
Add the chicken broth, bay leaf, salt substitute, oregano and pepper and bring to a boil.
Reduce heat and simmer for about 10 minutes.
Add the tiny pasta and simmer for 5 - 7 minutes.
Remove bay leaf.
Add the spinach and cook for 2 - 3 minutes.
Season with additional pepper, if desired.
Makes four 1 1/2 cup servings.
