    Vegetable - Stuffed Peppers #3

    List of Ingredients

    4 medium sweet green bell peppers,
    ...tops cut off, insides removed
    ...finely mince the tops and set aside
    2 cups cooked rice
    1 cup shredded reduced fat Cheddar cheese
    2 teaspoons dried parsley
    1/2 teaspoon salt
    1/8 teaspoon freshly ground pepper

    Recipe

    Preheat the oven to 350 degrees F.
    Place peppers in a saucepan large enough to hold them.
    Add 1/2 cup boiling water and cover.
    Let steam 5 minutes. Remove and drain.
    Set in a baking pan large enough to hold the peppers.
    Mix the minced green pepper, rice, cheese, parsley, salt
    and pepper together. Stuff mixture into peppers.
    Bake for 15 - 25 minutes, until the minced pepper inside
    stuffing is cooked to your preference and the cheese has
    melted.
    Makes 4 servings.
