    SpreadTopping - Sugar Free Strawberry Jam

    List of Ingredients

    4 c. strawberries, halved
    1/2 c. white grape juice concentrate, (can simmer down from juice to make 1 1/2 cups)
    2 1/2 tbsp lemon juice
    1/4 tsp. grated lemon rind
    1 1/2 tbsp. unflavored gelatin (1 + 1/2 envelopes)

    Recipe

    Place the strawberries, grape juice concentrate, lemon juice and the lemon rind in saucepan.
    Mash the strawberries slightly to release the juice.
    Heat to boiling.
    Sprinkle with the unflavored gelatin.
    Remove from heat, skim and pack into hot jars with hot lids.
    Hot water bath for 5 minutes or cool to room temperature to freeze.
    This tastes better if it is allowed to sit for a week.
    Freezes beautifully for up to 6 months.
