    PiePastry - Sweet Potato Pie

    List of Ingredients

    3 tablespoons light margarine
    1/4 cup sugar substitute
    1/4 teaspoon salt
    1 large egg yolk
    3 tablespoons fresh lemon juice
    1 teaspoon grated lemon zest
    1/2 teaspoon ground cinnamon
    3 large cooked, mashed sweet potatoes,
    ...(1 1/2 pounds)
    1 cup fat free evaporated milk
    3 large egg whites
    1 unbaked 9 inch pie crust

    Recipe

    Preheat the oven to 350 degrees F.
    Use a large bowl to beat together the margarine, sugar substitute.
    Stir in the yolk, lemon juice, lemon zest, and cinnamon and mix well.
    Blend the sweet potatoes and milk into this mixture. Set aside.
    Beat the whites until stiff peaks form.
    Carefully fold the egg whites into the sweet potato mixture.
    Pour into the crust.
    Bake for about 40 - 50 minutes, or until a knife inserted
    in the center comes out clean.
    Cool and cut the pie into 8 slices.
