    Vegetable - Tomatoes + Green Beans

    List of Ingredients

    1/2 lb. trimmed fresh green beans
    1 1/2 tsp. vegetable oil
    1 tsp. crushed garlic
    3/4 c. chopped onion
    1/3 c. chopped sweet red or yellow pepper
    1 15oz. can diced tomatoes
    1/2 tsp. dried basil
    1/2 tsp. dried oregano
    2 tbsp. chicken broth
    2 tsp. lemon juice
    2 tsp. grated Parmesan cheese, optional

    Recipe

    Steam green beans just until tender. Set aside.
    In a non stick frying pan, heat the oil.
    Saute garlic, onion and red pepper just until tender.
    Add the green beans, tomatoes, basil, oregano, broth
    and lemon juice.
    Cook for 2 minutes, stirring constantly.
    Serve sprinkled with Parmesan.
    Makes 4 servings.
