    SoupStew - Tortellini Soup

    List of Ingredients

    1 finely chopped clove garlic
    1 small chopped onion
    1 chopped stalk celery
    1 medium chopped carrot
    2 tbsp. butter
    6 c. water
    4 tsp. chicken bouillon granules
    1 10oz. pkg. dried cheese filled tortellini
    3/4 tsp. dried parsley
    1/4 tsp. pepper
    1/2 tsp. ground nutmeg
    freshly grated Parmesan cheese

    Recipe

    In a 4 quart Dutch oven style pan, over a medium/low heat; cook the garlic, onion, celery and carrot in the butter for 10 minutes, stirring frequently.
    Stir in the water and bouillon granules. Heat to boiling.
    Reduce the heat and stir in the tortellini.
    Cover and simmer for 20 minutes, stirring occasionally, or until tortellini are tender.
    Stir in the parsley, pepper and nutmeg.
    Cover and cook for 10 minutes.
    Top each serving with grated Parmesan cheese.
