    Meat - Turkey Provencal

    List of Ingredients

    1 1/2 lbs. turkey fillets
    2 tbsp. unbleached white flour
    salt and pepper
    2 tsp. olive oil
    1 diced onion
    2 cloves minced garlic
    1 1/2 c. canned crushed tomatoes, (12oz.)
    1 tsp. dried rosemary
    1 tsp. dried thyme
    1/4 c. sliced black olives
    2 tsp. capers
    2 tbsp. dried parsley

    Recipe

    Place the flour, salt and pepper in a ziploc type of bag. Shake to mix.
    Then place the turkey fillets into the bag and shake until the fillets are coated with the flour mixture.
    In a large frying pan, over a medium heat, heat the oil. Add the fillets and saute on each side for 4 minutes. Remove from the pan.
    In the same pan, saute the onion and garlic for 5 minutes, until the onions begin to brown.
    Add the crushed tomatoes.
    Bring to a boil, lower the heat and let simmer for 5 minutes.
    Add the turkey fillets, rosemary, thyme, olives and capers to the pan and simmer over a low heat for 10 minutes.
    Add the parsley and serve.
    Makes 6 servings.
