    SoupStew - Turkey Stew

    List of Ingredients

    2 tsp. Olive oil
    3/4 lb. boneless, skinless turkey breast, cut into 3/4" cubes
    2 medium onions, cut into thin wedges
    2 stalks sliced celery
    2 sliced carrots
    2 potatoes, cut into 3/4" cubes
    1 14 1/2oz. can reduced sodium, fat free chicken broth
    1 1/4 tsp. dried thyme
    3/4 tsp. celery salt
    1/4 tsp. ground black pepper
    1 c. frozen peas

    Recipe

    Pour the oil into a 4 quart saucepan.
    Saute the turkey, onions, and celery for about 8 minutes, until the onions are tender.
    Add the carrots, potatoes, broth and thyme.
    Bring to a boil, then reduce and simmer, covered, for about 15 minutes, until the turkey and vegetables are tender.
    Stir in the peas and cook to desired tenderness, or 3 to 4 minutes.
    Season to taste with the celery salt and pepper.
    Makes 4 servings.
