    Meat - Veal with Lemon

    List of Ingredients

    1 lb. veal scallops, pounded to 1/8" thickness
    1/8 tsp. ground black pepper
    1 tbsp. I Can't Believe It's Not Butter Light
    1 minced garlic clove
    1/4 c. unsweetened apple juice or dry white wine
    2 tbsp. fresh lemon juice
    1 tbsp. drained capers
    1/2 tsp. dried parsley
    1/2 thinly sliced lemon

    Recipe

    Season the veal with the pepper.
    Heat the butter light in a large non stick frying pan over a medium/high heat.
    Saute the veal about 2 minutes, until lightly browned, in batches if necessary.
    Remove to a warm serving platter and cover with foil.
    Add the garlic to the frying pan and saute for 1 minute.
    Add the apple juice, lemon juice, and capers and simmer for 1 minute.
    Pour the sauce over the veal .
    Sprinkle with the parsley and garnish with lemon slices.
    Makes 4 servings.
