Vegetable - Cabbage Gratin Quiche
cooking spray
4 cups coarsely chopped cabbage
1 cup coarsely shredded carrot
1/2 cup sliced green onions
1 cup skim milk
1/4 cup shredded Cheddar or Monterey Jack cheese
1/2 teaspoon caraway seeds, optional
1/4 teaspoon salt
2 lightly beaten eggs
1 egg white
2 teaspoons dried parsley or 2 tablespoons freshly minced
1 tablespoon freshly grated Parmesan cheese
Preheat oven to 375 degrees F. Coat a 10x6x2 inch baking dish
with cooking spray. Set aside.
Coat a medium saucepan with cooking spray. Use a medium heat,
and when hot, add the cabbage, carrot, and onions. Saute for 7 minutes.
Spoon into the baking dish coated. Set aside.
Combine the milk, Cheddar cheese, caraway, salt, eggs and egg white
together in a medium bowl, and stir until well combined. Pour over top
of the mixture in the baking dish.
Combine the parsley and Parmesan cheese and sprinkle over top.
Bake for 40 minutes or until knife inserted in center comes out clean.
Let stand at least 5 minutes before serving.
Makes 6, 1/2 cup servings.
