    (creamy cornmeal dish)

    Vegetable - Creamy Polenta

    2 cups Homemade Chicken Broth
    or canned reduced-sodium chicken broth
    1/2 cup yellow or white cornmeal
    1/2 teaspoon salt (optional)
    1/4 cup freshly grated Parmesan cheese

    Combine the broth and cornmeal in a medium saucepan.
    Bring to a boil, stirring frequently. Reduce the heat
    and simmer over low heat until thickened but creamy,
    about 12 to 15 minutes. Stir often to prevent sticking.
    Taste and add salt, if desired. Remove from the heat.
    Sprinkle with cheese. Makes 4 servings.
