    Hot Reuben Dip

    Hot Reuben Dip

    1 8oz. pkg, softened cream cheese
    1 c. + 1/2 c. shredded Swiss cheese, (6oz.), separated
    1/2 c. Thousand Island salad dressing
    4oz. chopped sliced deli corned beef
    1/2 c. drained sauerkraut
    pretzel crackers and cocktail size rye bread slices, if desired

    Heat oven to 400. Need a 9x1 1/2" quiche dish or 9x1 1/4" pie plate.
    Mix the cream cheese, the 1 c. of the Swiss cheese, the dressing and corned beef together.
    Spread the mixture in the quiche dish.
    Top with the sauerkraut and the remaining 1/2 c. Swiss cheese.
    Bake for about 15 minutes or until bubbly around the edge.
    Serve hot with pretzel crackers or cocktail bread.
    Makes about 2 1/2 c. or 10 servings.
