    lamington pan - 11 x 9 inch

    Another Aussie favorite not to be forgotten.
    Plain cake cut into squares, dipped in chocolate icing
    rolled in coconut.

    Australian - Lamingtons, Jam

    6 ounces butter
    1 cup granulated white sugar
    1 teaspoon vanilla
    3 eggs
    1 1/4 cups self rising flour
    1/2 teaspoon salt
    3/4 cup milk
    1 cup thin strawberry jam
    desiccated coconut*

    Cream butter and sugar.
    Add vanilla and eggs.
    Mix in sifted flour and salt alternately with milk.
    Spread batter into greased and floured Lamington tin.
    Bake in 350 (moderate) oven for 30 minutes.
    Cool. Then cut into squares.
    Spread jam thinly over cake.
    Toss into coconut.

    Notes:
    *Desiccated coconut is different than the more common
    sweetened coconut sold in plastic bags or cans in grocery
    stores. Desiccated coconut has a sweet coconut flavor
    and dry (not sticky) texture. You can find it in health
    food stores or specialty food stores, but if time doesn't
    permit this extra trip, just use sweetened coconut.
    - To make chocolate lamingtons, make the same except
    replace the jam with melted chocolate.
