Apple Pancake for One

List of Ingredients




1 tsp. white sugar
1/4 tsp. ground cinnamon
1 beaten egg
1/4 c. flour
1/4 c. milk
1/2 tsp. lemon juice
pinch salt
2 tbsp. butter
1/2 shredded or thinly sliced apple

Recipe



Mix the sugar with the cinnamon and set aside.
Preheat oven to 425.
Beat together the egg, flour, milk, lemon juice, and salt until well
combined but not completely smooth. (There should be small lumps
in the batter.)
Melt the butter in an 8" heavy duty, (cast iron works best) frying
pan over a medium heat.
Remove from the heat and pour in the batter.
Quickly sprinkle/arrange the apple over the batter and bake until
the pancake is golden and puffed up.
Sprinkle with the sugar mixture and serve immediately.
Makes 1 serving.
