    Baked Stuffed French Toast

    List of Ingredients

    4 ripe mashed bananas
    8 thin slices light (reduced fat) mixed grain bread
    1/2 c. low fat milk
    2 large eggs
    1 tsp. vanilla extract
    1/2 - 1 tsp. ground cinnamon, or to taste!
    non stick cooking spray
    powdered confectioners sugar
    8 large strawberries
    maple syrup, optional

    Recipe

    Preheat oven to 350. Need a baking sheet.
    Spread mashed bananas on 4 slices of bread.
    Top with remaining 4 slices of bread.
    Whisk milk, eggs, vanilla and cinnamon in glass pie dish.
    Working in batches, dip bread in egg mixture and let soak for 45 seconds on each side.
    Spray large nonstick skillet with cooking spray.
    Over a medium heat, and working in batches, cook soaked bread until golden, about 2 minutes per side.
    Transfer to baking sheet and bake 8 minutes.
    Place on plates.
    Dust with powdered sugar.
    Garnish with strawberries.
    Serve with syrup, if desired.
    Makes 4 servings.
    Very filling.
