    Blueberry French Toast w/Blueberry Sauce

    for the toast:
    12 slices day old bread, crusts trimmed,
    ...cut into 1 inch cubes
    2, 8 ounce packages cream cheese, cut into cubes
    1 cup blueberries, well drained
    12 eggs,
    2 cups milk
    1/3 cup maple syrup

    for the sauce:
    1 cup white granulated sugar
    2 tablespoons cornstarch
    1 cup water
    1 cup blueberries
    1 tablespoon butter

    for the toast:
    Place half the bread cubes in a greased 13x9x2 inch baking pan.
    Arrange cream cheese over top of bread.
    Top with blueberries and remaining bread cubes.
    Beat eggs in a large bowl.
    Blend in milk and syrup.
    Pour over to of bread.
    Cover and refrigerate for 8 hours or overnight.
    Remove from refrigerator 30 minutes before baking.
    Bake, covered, at 350 degrees F. for 30 minutes.
    Uncover and bake for 25 to 30 additional minutes, or
    until golden.
    Serve with sauce drizzled over top.

    for the sauce:
    Combine sugar and cornstarch in a saucepan.
    Whisk in the water.
    Bring to a boil over a medium heat.
    Boil for 3 minutes, stirring constantly.
    Stir in blueberries.
    Reduce heat and simmer 8 to 10 minutes or until
    blueberries burst.
    Stir in butter until melted.
    Pour over toast and ENJOY!!!
