Egg + Sausage Casserole
1 pound cooked and drained sausage
1/2 pound bacon cooked and crumbled (optional)
12 eggs
3 cups milk
salt and black pepper to taste
8-10 slices Italian bread, cut into 1 inch pieces
...(I use 1/2 a loaf of whole grain Italian from a
...local bakery and just tear it up)
2 cups shredded Cheddar cheese (or more if desired)
1/4 cup diced green pepper (optional)
1/2 cup diced onions or sliced green onions (optional)
In a deep 9 x 13 x 2 inch/ or lasagna pan, place the
bread - top with crumbled cooked sausage.
Top with onions and green pepper if desired.
Beat milk and eggs, then add salt and pepper, (I never
add the salt), pour over the layers.
Sprinkle top with cheese and crumbled bacon if desired.
Refrigerate overnight.
Bake at 350 degrees F. for 1 to 1 1/4 hours.
I cover it for the first 45 minutes.
Options:
change the peppers to jalapeno's
and the cheese to Monterey jack
Or
nice to add mushrooms, change up the cheese to Swiss ...
Can be served on plates or spooned onto warmed flour
tortillas for portable/packable/reheatable breakfast
burritos...
served many times many ways with all happy results...
(serves 12-20 depending on how much bread you use...)
